Thanksgiving Travel Stats

Sunday After Thanksgiving is Heaviest Travel Day of the Year
The most traveled day of the holiday period - and of the entire year - is the Sunday after Thanksgiving, when 13.7 million long-distance trips are made (Figure 2). The day after Christmas is the second most traveled day during the holidays, with 12 million trips. New Year's Eve is less traveled than either Christmas or Thanksgiving, with 8.3 million people traveling. There appears to be no increased pattern of travel associated with the celebration of Hanukkah.

While Christmas and Thanksgiving record about the same amount of travel, Thanksgiving's high volume of travel is concentrated in fewer days, which places a heavier burden on the transportation system. During the five days surrounding Thanksgiving, an average of 10.8 million trips are taken per day, nearly double the average number of daily trips for the whole year; the daily average for the five days around Christmas is 9.5 million trips, but more Christmas travelers leave earlier and stay longer than Thanksgiving travelers so that trips are spread out over a longer period of time.

New Year's is a less traveled five-day holiday period, because the first few days of the New Year are relatively light travel days. During the five days surrounding New Year's Day, Americans take an average of 6.3 million trips per day.

Holiday travel accounts for 8.3 percent of all trips and 9.8 percent of all miles traveled during the year. Trips taken during the five-day periods around Thanksgiving and Christmas account for 6.3 percent of America's annual trips and 6.8 percent of the miles. The five-day period around New Year's Day accounts for 2.1 percent of all annual trips and 3 percent of miles.

Turkey and Cranberry Muffins


Prep Time: 20 minutes
Cook Time: 12 minutes

Ingredients:
• 8 oz. pkg. corn muffin mix
• 1 Tbsp. chopped fresh parsley or cilantro
• Cooked slices of turkey
• 1/3 cup cranberry sauce

Preparation:
Prepare muffins according to package directions, adding the chopped parsley or cilantro. Grease bottoms of miniature muffin cups, and fill each cup 2/3 full of batter. Bake according to package directions until light golden brown, and remove from muffin cups to cool. Cut each muffin in half, and make tiny sandwiches with the turkey and cranberry sauce (I'd add a bit of sour cream too).
This wonderfully quick and delicious main dish recipe is pure comfort food.


Creamy Tex-Mex Chicken Spaghetti

Prep Time: 15 minutes
Cook Time: 15 minutes

Ingredients:
• 1 (16 ounce) package spaghetti pasta
• 2 tablespoons olive oil
• 1 onion, chopped
• 2 (9 ounce) packages precooked chicken slices or 2 cups chopped up
• 1 (16 ounce) jar chunky salsa
• 1 (15 ounce) jar four cheese Alfredo sauce
• 1/2 cup grated Parmesan cheese
• 2 avocados, peeled and chopped

Preparation:
Bring a large pot of salted water to a boil. Meanwhile, in large skillet cook onion in olive oil over medium heat until onion is tender, about 5 minutes.

Cook pasta according to package directions. While pasta is cooking, add chicken or turkey and salsa to onions and bring to a simmer. Then stir in Alfredo sauce.
Drain pasta and add to mixture in skillet. Toss over medium heat for a few minutes. Then serve, sprinkling with Parmesan cheese and topping with avocado. Serves 6

Turkey Pizza

Prep Time: 20 minutes
Cook Time: 20 minutes

Ingredients:
• 1/2 Yeast Crust Recipe OR 1 Boboli pizza crust
• 1/3 cup mayonnaise
• 1/2 tsp. dried basil leaves
• 1/2 tsp. dried thyme leaves
• 1/8 tsp. pepper
• 2 Tbsp. Dijon mustard
• 2 cups cubed cooked turkey
• 1-1/2 cups shredded Muenster cheese
• 6 slices bacon, cooked crisp and crumbled
• 2 tomatoes, chopped and seeded
• 1-1/4 cups shredded Swiss cheese
• 1/4 cup grated Parmesan cheese

Preparation:
Preheat oven to 425 degrees. Make and prebake crust if using. Let cool. No need to prebake Boboli crust.
In small bowl, combine mayonnaise, basil, thyme, pepper, and mustard and mix well. Stir in turkey, then spread crust with this mixture. Top with remaining ingredients in order. Bake at 425 degrees for 10-15 minutes until crust is golden brown and cheese is melted. 6 servings

TFC Christmas Candlelight Concert - December 4, 2008


Toccoa Falls, GA – Toccoa Falls College School of Music presents its annual Christmas Candlelight Concert, Thursday, December 4 at 7:30 p.m., in Grace Chapel and Performing Arts Center.

Dr. Tom Council, Director for the Toccoa Falls College School of Music, relates, “Toccoa Falls students from the School of Music will be highlighted in this year’s presentation of traditional, contemporary, and favorite Christmas selections.” Performances will be made by a variety of college music groups, including solos by Professor David Jones and Philip Himebook, and the college choir. The feature presentation will be selections from a multi-cultural instrumental group who will also join with the college choir to close the concert with the final number in Spanish. This performance promises an evening of delightful Christmas music designed to set the tone for a wonderful Christmas season.

A pre-concert dinner buffet will be available at Gate Cottage Restaurant. Guests will have the opportunity to meet the conductors and some of those participating in the evening performances. Reservations for the dinner at Gate Cottage are required and can be made by calling 706-886-7014.

WRAF Church of the Week - November 24, 2008

LifePoint Church of Greenville, SC is the latest WRAF "Church of the Week."



Congratulations to Pastor Phil Pike and the entire congregation of LifePoint.


Linda nominated the church and shared the following: "Our church is a little over 5 years old. We are a very small, but loving church that seeks to know God and to make Him known not only in our community, but to those in other parts of the world.


We are attempting to reach our local community by each member of the body reaching out to his/her neighbors and those that we come into contact with, with love, caring and sharing Christ.

We are attempting to reach those in other parts of the world through our Lifepoint website.

We have been taught that it is not just the pastor's responsibility to minister, but it is also the responsibility of each member in the body of Christ, and what a joy it is to do just that. Phil Pike is our pastor; he has a great heart for the Lord. Phil initially created our website. We have since had two men to join our church family whom God had gifted in the area of computer technology etc. They have tweaked our website enabling us to reach thousands of people in other countries with the message of God's love and salvation through Jesus Christ our Lord.


Even though we are small, we are planning a missions trip next year to minister face to face with people in other parts of the world. We also had the priviledge of sending over 100 study Bibles to some of our soldiers in Iraq.


Last year, before winter set in, we had the priviledge of giving out over 300 blankets to the homeless. Also, last year during the spring and summer months we held monthly picnics with the hopes of reaching out to paper in the park by way of giving out free bottled water and having fun games that they could join in on. Our efforts there was to forge relationships so that we could share Christ with those that did not know him. I am reminded of the widow that gave all she had to the Lord.


Though we are a small church, we at Lifepoint desire to give all we have to be used as vessels of honor for his kingdom. Thank you for this opportunity to share how God is using this small body for his glory."

Jazzy Mashed Potatoes

5 pound bag Yukon Gold Potatoes
1 stick (real) butter
1 cup milk
thyme
chives
1 bulb garlic
olive oil
salt and pepper

Yukon Golds are the best choice for making creamy mashed potatoes and most potatoe gratins and casserole-type dishes. You will need about 4 pounds or about 12 potatoes (5-6 ounces each) for 12 servings (about 2/3 cup per serving). Whip up the oooked potatoes with 1 cup of milk (or half-and-half), 1 stick of butter, salt and pepper to taste.

To dress it up: place a whole bulb of garlic on a double layer of foil. Drizzle with olive oil and sprinkle with salt and pepper. Wrap it in the foil and place in the oven 1 hour before the turkey is ready. When garlic is soft, add any jices that accumated in the bottom to the cooked potatoes. Squeeze the softened garlic into the potatoes along with some butter and milk add fresh chopped thyme or chives.

Remember the basics when cooking turkey



Cooking a turkey can seem daunting, but it's simply a matter of following directions and watching your food thermometer.

What? You don't have a thermometer?

OK, that's the first - and, essentially only - thing you need to buy, along with the turkey. The thermometer is key when cooking, as it ensures a safe minimum internal temperature of 165 F has been reached to destroy bacteria and prevent foodborne illness.

Otherwise, follow the instructions below for a delicious - and safe - turkey dinner for Thanksgiving this year.

Roasting instructions

Set the oven temperature no lower than 325 F. Preheating is not necessary.
Be sure the turkey is completely thawed. Times are based on fresh or thawed birds at a refrigerator temperature of 40 F or below.
Place turkey breast-side up on a flat wire rack in a shallow roasting pan 2 to 2 1/2 inches deep.
Tuck wing tips back under shoulders of bird (called "akimbo"). (optional)
Add one-half cup water to the bottom of the pan. (optional)
A tent of aluminum foil may be placed loosely over the breast of the turkey for the first 1 to 1 1/2 hours, then removed for browning. Or, a tent of foil may be placed over the turkey after the turkey has reached the desired golden brown color. (optional)
For optimum safety, cook stuffing in a casserole dish as a dressing. If you decide to stuff your turkey, mix ingredients just before stuffing it; stuff loosely. Additional time is required for the turkey and stuffing to reach a safe minimum internal temperature (see chart).
For safety and doneness, the internal temperature should be checked with a food thermometer. The temperature of the turkey and the center of the stuffing must reach a safe minimum internal temperature of 165 F. Many people may choose to cook to 180 F to ensure that the meat is not pink and is well done. Check the temperature in the innermost part of the thigh and wing and the thickest part of the breast.
Let the bird stand 20 minutes before removing stuffing and carving.

Possible turkey pitfalls

Many variables can affect the roasting time of a whole turkey:

A partially frozen turkey requires longer cooking
