Turkey and Cranberry Muffins

Cook Time: 12 minutes
Ingredients:
• 8 oz. pkg. corn muffin mix
• 1 Tbsp. chopped fresh parsley or cilantro
• Cooked slices of turkey
• 1/3 cup cranberry sauce
Preparation:
Prepare muffins according to package directions, adding the chopped parsley or cilantro. Grease bottoms of miniature muffin cups, and fill each cup 2/3 full of batter. Bake according to package directions until light golden brown, and remove from muffin cups to cool. Cut each muffin in half, and make tiny sandwiches with the turkey and cranberry sauce (I'd add a bit of sour cream too).
This wonderfully quick and delicious main dish recipe is pure comfort food.
Creamy Tex-Mex Chicken Spaghetti
Prep Time: 15 minutes
Cook Time: 15 minutes
Ingredients:
• 1 (16 ounce) package spaghetti pasta
• 2 tablespoons olive oil
• 1 onion, chopped
• 2 (9 ounce) packages precooked chicken slices or 2 cups chopped up
• 1 (16 ounce) jar chunky salsa
• 1 (15 ounce) jar four cheese Alfredo sauce
• 1/2 cup grated Parmesan cheese
• 2 avocados, peeled and chopped
Preparation:
Bring a large pot of salted water to a boil. Meanwhile, in large skillet cook onion in olive oil over medium heat until onion is tender, about 5 minutes.
Cook pasta according to package directions. While pasta is cooking, add chicken or turkey and salsa to onions and bring to a simmer. Then stir in Alfredo sauce.
Drain pasta and add to mixture in skillet. Toss over medium heat for a few minutes. Then serve, sprinkling with Parmesan cheese and topping with avocado. Serves 6
Turkey Pizza
Prep Time: 20 minutes
Cook Time: 20 minutes
Ingredients:
• 1/2 Yeast Crust Recipe OR 1 Boboli pizza crust
• 1/3 cup mayonnaise
• 1/2 tsp. dried basil leaves
• 1/2 tsp. dried thyme leaves
• 1/8 tsp. pepper
• 2 Tbsp. Dijon mustard
• 2 cups cubed cooked turkey
• 1-1/2 cups shredded Muenster cheese
• 6 slices bacon, cooked crisp and crumbled
• 2 tomatoes, chopped and seeded
• 1-1/4 cups shredded Swiss cheese
• 1/4 cup grated Parmesan cheese
Preparation:
Preheat oven to 425 degrees. Make and prebake crust if using. Let cool. No need to prebake Boboli crust.
In small bowl, combine mayonnaise, basil, thyme, pepper, and mustard and mix well. Stir in turkey, then spread crust with this mixture. Top with remaining ingredients in order. Bake at 425 degrees for 10-15 minutes until crust is golden brown and cheese is melted. 6 servings
