Recipe of the Day: Vidalia Onion Pie

Here is a one of the delicious recipes that will be featured in the new cookbook Radio Recipes from the WRAF Family.



VIDALIA ONION PIE


1 c. Ritz cracker crumbs

1/2 stick Butter, melted

2 c. Vidalia onions, thinly sliced

2 T. Butter

2 Eggs3/4 c. Milk

3/4 tsp. Salt

1/4 c. Grated sharp cheddar cheese

Dash of pepper

Pinch of Parsley

Pinch of Paprika

Mix crackers crumbs and melted butter. Press into an eight inch pie pan. Saute onions with butter until clear, not brown. Spoon into crust. Beat eggs with milk, salt and pepper and pour over onions. Sprinkle with cheese and paprika. Bake at 350° for 30 minutes, or until center is firm. Sprinkle with parsley just before serving.
